The available option in the OOB dialogue box only allows for a single default chart or all available charts. This makes creating an intuitive dashboard difficult as many of the available charts are not appropriate for the dataset or the audience.

Would be a nice idea for sure. I have not seen any updates or changes to this functionality for years, however. Microsoft seems to be putting much more of their focus on PowerBI and allowing you to embed more rich reports into CE instead of updating functionality on the old dashboards.

In the meantime, you can always submit an idea over at Ideas for them to take a look.
